SIMPLE GRILLED PRAWN SKEWERS
When matched with the right spices, prawns can be so flavoursome. I love to serve these with courgette noodles and a simple red pepper sauce for dinner, but some diced avocado and the garlic ‘mayo’ here is another option as a light lunch. MAKES 3 SKEWERS
1 tbsp rapeseed oil, plus extra for frying
1 tsp smoked paprika
1 tsp chilli powder
½ tsp ground cumin
½ tsp ground coriander
sea salt and freshly ground black pepper
12 Dublin Bay prawns, peeled and deveined (ask your fishmonger to do this for you)
squeeze of fresh lemon juice
courgette noodles with simple red pepper sauce (here), to serve (optional)
